SPAGHETTI AL LIMONE

1 serving / 20 minutes preparation

Ingredients

  • Fresh pasta (spaghetti) 100g
  • Lemon 1 pc
  • Butter 100g
  • Salt

Method

  1. Cook the pasta in salted water.
  2. Sauce: pasta water + lemon juice, simmer briefly.
  3. Stir in butter for creaminess.
  4. Drain pasta, toss in the sauce, grate lemon zest on top.

AVOCADO TOAST, POACHED EGG, SESAME

1 serving / 15 minutes preparation

Ingredients

  • Sourdough bread 1 slice
  • Eggs 2 pcs
  • Avocado ½
  • Lemon 1 pc
  • Black and white sesame seeds
  • Olive oil
  • Salt

Method

  1. Poach the eggs in salted water with a splash of vinegar.
  2. Toast the bread in olive oil on both sides.
  3. Mash the avocado with lemon juice, salt and olive oil.
  4. Spread on toast, place the egg on top, add lemon zest and sesame seeds.

HUMMUS, CHARRED CARROT, PISTACHIOS, CORIANDER

2 servings / 30 minutes preparation

Ingredients

For the hummus:

  • Chickpeas (pre-cooked) 200g + aquafaba 100ml
  • Tahini paste 10g
  • Lemon 1 pc
  • Olive oil 30ml
  • Garlic 3g
  • Cumin 1g

Other:

  • Carrots 300g
  • Pistachios 15g
  • Fresh coriander 10g

Method

  1. Hummus: blend all ingredients in a blender until smooth.
  2. Boil carrots until half-soft, then char on high heat until blackened on all sides.
  3. Toast and chop the pistachios, serve with the carrots and hummus.

SATURDAY NIGHT SANDWICH

2 servings / 5 minutes preparation

Ingredients

  • Sourdough bread
  • Butter 70g
  • Anchovies 30g
  • Red onion 50g
  • Favourite herbs (chervil, chives, flat-leaf parsley…)

Method

  1. Fry a thick slice of bread in butter until golden brown on both sides.
  2. Let cool, spread with butter and cover with anchovies.
  3. Slice the onion into rings, mix with herbs and place on top.
  4. Optionally cover with a second slice of bread.
